{"id":2713,"date":"2020-03-25T15:02:42","date_gmt":"2020-03-25T14:02:42","guid":{"rendered":"https:\/\/morphocostarica.com\/?p=2713"},"modified":"2024-11-26T16:30:12","modified_gmt":"2024-11-26T16:30:12","slug":"la-receta-del-gallo-pinto","status":"publish","type":"post","link":"https:\/\/morphocostarica.com\/es\/la-recette-du-gallo-pinto\/","title":{"rendered":"La receta del Gallo Pinto"},"content":{"rendered":"<h2>Desayuno tradicional costarricense<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2714\" src=\"https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-300x200.jpg\" alt=\"gallo pinto costa rica\" width=\"300\" height=\"200\" srcset=\"https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-300x200.jpg 300w, https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-1024x683.jpg 1024w, https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-768x512.jpg 768w, https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-1536x1024.jpg 1536w, https:\/\/morphocostarica.com\/wp-content\/uploads\/2020\/03\/gallo-pinto-2048x1365.jpg 2048w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Aqu\u00ed presentamos nuestra propia receta de este gran cl\u00e1sico culinario costarricense: Gallo Pinto.<\/p>\n<p>Esta receta procede de los innumerables gallo pinto degustados durante nuestras excursiones, inspecciones, vacaciones y otras visitas al coraz\u00f3n de Costa Rica.<\/p>\n<h3>Ingredientes<\/h3>\n<ul>\n<li>Un ramo de <strong>cilantro<\/strong><\/li>\n<li>2 dientes de<strong>ajo<\/strong><\/li>\n<li>1 <strong>cebolla<\/strong><\/li>\n<li>1 <strong>pimiento rojo<\/strong> (o verde o amarillo al gusto)<\/li>\n<li>50 ml de <strong>Salsa Lizano<\/strong> (no obligatorio)<\/li>\n<li>2 cucharadas<strong>aceite de girasol o de colza<\/strong><\/li>\n<li>1 cucharadita de <strong>comino<\/strong> en polvo<\/li>\n<li><strong>Sal<\/strong> y <strong>pimienta<\/strong><\/li>\n<li>450 gramos de <strong>arroz de grano largo<\/strong><\/li>\n<li>275 g de <strong>alubias negras<\/strong><\/li>\n<li>100 g de zumo <strong>alubias negras<\/strong> (salsa recuperada de la cocci\u00f3n de las alubias)<\/li>\n<\/ul>\n<p>Nota: el toque secreto, a\u00f1adir un poco <strong>caf\u00e9 l\u00edquido<\/strong>.<\/p>\n<p>Tambi\u00e9n es buena idea a\u00f1adir un poco de apio, aunque no forme parte de la receta original.<\/p>\n<p>&nbsp;<\/p>\n<p>Tradicionalmente, este desayuno se preparaba con el resto de la comida del d\u00eda anterior.<\/p>\n<p>Arroz y frijoles negros. Estos dos ingredientes nunca faltan en la mesa de un costarricense.<\/p>\n<p>Las abuelas le dir\u00e1n que el secreto de un excelente Gallo Pinto reside en la forma de cocer las alubias.<\/p>\n<p>Si tiene una lata de alubias negras, el jugo de la lata le servir\u00e1, a\u00f1adiendo un poco de agua.<\/p>\n<p>Como alternativa, recomendamos preparar las alubias el d\u00eda anterior.<\/p>\n<p>&nbsp;<\/p>\n<h3>Preparaci\u00f3n de las jud\u00edas :<\/h3>\n<p>Enjuagar las jud\u00edas en agua fresca para eliminar cualquier impureza.<\/p>\n<h4>Dejar en remojo :<\/h4>\n<ul>\n<li>Opci\u00f3n 1: Dejar en remojo toda la noche (6-8 horas) en una cazuela tapada llena de agua.<\/li>\n<li>Opci\u00f3n 2: En una cazuela llena de agua, llevar a ebullici\u00f3n y cocer durante 2 minutos.<\/li>\n<\/ul>\n<p>A continuaci\u00f3n, se apaga el fuego y se deja reposar durante una hora.<\/p>\n<p>Este paso ayuda a eliminar el gas de las jud\u00edas y har\u00e1 que la receta sea m\u00e1s sencilla.<\/p>\n<h4>Cocinar alubias<\/h4>\n<p>Escurrir el agua de las alubias en remojo.<\/p>\n<p>Poner las alubias en un cazo y a\u00f1adir m\u00e1s agua hasta que las alubias midan un dedo m\u00e1s.<\/p>\n<p>A\u00f1ada las hojas de laurel, el tomillo y el ajo machacado pero sin pelar. Puede a\u00f1adir cualquier otra especia de su elecci\u00f3n que pueda dar sabor a sus alubias. Es esta base la que har\u00e1 que su Gallo Pinto sea un \u00e9xito.<\/p>\n<p>Llevar a ebullici\u00f3n y reducir el fuego hasta que las jud\u00edas est\u00e9n tiernas.<\/p>\n<p>Las alubias estar\u00e1n listas cuando puedan machacarse f\u00e1cilmente con un tenedor. Suele tardar entre 45 minutos y 1 hora.<\/p>\n<p>A\u00f1adir la sal una vez cocidas las alubias.<\/p>\n<p>&nbsp;<\/p>\n<h2>Preparaci\u00f3n del Gallo Pinto<\/h2>\n<p>Picar finamente la cebolla y el pimiento.<\/p>\n<p>Vierta el aceite en la sart\u00e9n y a\u00f1ada el comino molido y el ajo finamente picado.<\/p>\n<p>Fre\u00edr la cebolla hasta que est\u00e9 transparente. A\u00f1adir los pimientos.<\/p>\n<p>Dorar toda la mezcla.<\/p>\n<p>Verter el arroz cocido y las jud\u00edas en la sart\u00e9n, removiendo suavemente para no partir las jud\u00edas.<\/p>\n<p>A\u00f1adir 100 g del jugo de cocci\u00f3n de las jud\u00edas.<\/p>\n<p>Cocine lentamente.<\/p>\n<p>&nbsp;<\/p>\n<p>Si el gallo pinto queda demasiado seco, a\u00f1ade m\u00e1s jugo de jud\u00edas. Si se te acaba, una taza de caf\u00e9 servir\u00e1 y a\u00f1adir\u00e1 sabor. (Si te gusta el caf\u00e9, claro).<\/p>\n<p>&nbsp;<\/p>\n<p>A\u00f1adir el cilantro finamente picado antes de servir.<\/p>\n<p>&nbsp;<\/p>\n<p>Si tiene salsa Lizano, tambi\u00e9n conocida como salsa inglesa, utilice tanta como desee. Pero cuidado, esta salsa tiene un sabor fuerte, basta con unas gotas. Es bastante dif\u00edcil de conseguir en Francia, pero algunas tiendas especializadas la venden.
